You might want to check out the following link, which has the english translation of a recipe in Japanese for home made senbei. It’s not the traditional method, but it’s pretty simple and this way you can attempt to recreate whatever variety of senbei you like most.

Here’s another seemingly not-entirely-authentic recipe. I have a couple packs of imported senbei here, and neither contains wheat flour… But who knows, might taste good anyway.
